After opening up in late summer this year, husband and wife team Graham and Baiba have seen their fledgling cafe / bar go from strength-to-strength.
Serving everything from breakfast bagels to cocktails, Carter’s Lounge - based on Waterloo Road, behind Burger King - has proven to be a hit with customers.
As we approach the festive season, the venue is sure to continue sparkling, with brand new room Carter’s Cavern available to hire for festive functions and parties. Customers can also indulge in a Christmassy bite or two, with a festive bagel of turkey, stuffing and cranberry sauce set to make it onto the menu.
Here, we chat with Graham and Baiba to hear about their extension plans, and what they have lined up for the future...
What’s your names, and how long have you been running for?
Graham Butler and wife Baiba Butler. We’ve been open since August.
What’s your typical day like?
Monday to Thursday, days are pleasantly busy, with both Friday and Saturday days and nights really busy.
What do you most love about what you do?
The main thing has to be working for ourselves. There is no better feeling than putting in 60+ hours a week for yourself. We love that we are providing a good alternative for the people of Hinckley, and we love the amazing feedback / comments we have been receiving also.
What’s your biggest seller?
Daytime, it’s without a doubt bagels, although no one is more popular than the other. Night times is, without a doubt, the Pornstar Martini - the best one in Hinckley, as quoted by a lot of customers!
What made you decide to start your own business?
We always wanted this type of business and had one before in Spain. We came back to the UK last August for the birth of our only son, Carter, and then decided to open a business in his name!
What’s your biggest achievement so far?
It has to be the fact that we have brought forward our extension plans by six months due to high demand for more seating. it shows how popular we are, I suppose!
What’s your advice for someone wanting to start their own business?
Do not let anyone tell you “you can’t do this, you can’t do that.” Believe in what you want to do and have the courage to go for your dream.
What’s your favourite thing about Hinckley?
The immense support from the locals has been remarkable. They always say they like to support the independently-run businesses, and they have been true to their word so far.

As a business, we have plans for more ventures within the town over the next few years. We see what Hinckley needs and we will try our best to provide more things to make this already great town greater! Money dependent…!
